Instructions
  1. Slice Portobello caps in half like a burger bun, turning the gills inward.
  2. Slice or dice 1 red pepper, the tomato, celery, romaine, 2 mangoes and optional avocado, and set aside 1 cup of corn.
  3. Blend remaining ingredients into a sauce.
  4. Layer toppings and sauce onto the bello buns to assemble the handwich.
  5. Dont forget to Instagram your meal!
