This recipe is so simple I almost didn’t want to post it. But I know you will appreciate it! Pair with raw mango-tomato salsa (as in the picture), or raw marinara sauce for a perfect dinner OR a delish low fat raw vegan Fettuccini sauce, as follows . The options are endless.

Instructions
  1. Take a mandolin and move up and down the cucumber the long way, making thin strips. If you don’t have a mandolin, use the long blade on a spiralizer, or use a knife or peeler to thinly cut slices.
  2. Pulverize the sauce in a Vitamix or other blender until it becomes smooth and creamy! Or you could use a food processor for a while until it becomes buttery smooth.
