Instructions
    "Taco Meat"
    1. Pulse all "taco meat" ingredients to reach that colorful and amazing, perfect consistency.
    2. You have the option spread the "meat" on a Teflex sheet and dehydrate it for about 4 hours to give it a better texture, or you can go ahead and add it on into your dish.
    3. Layer 1 complete!
    Cashew Sour Cream
    1. Blend all ingredients.
    Lime Cilantro Avocado Sauce
    1. Blend all ingredients and set aside as a separate, optional dressing
    Salad Layers
    1. Place "taco meat" in the base of your salad dish (I LOVE this one because it allows you to see all of the layers in this salad).
    2. Next up, layer on all of the "other salad layers" in order - freshly chopped purple cabbage, yellow sweet corn, guacamole or avocado, crumbled raw vegan flax crackers or even some raw vegan corn chips if you can find or make them (see my recipes at www.fullyraw.com), romaine lettuce, some hearty pico de gallo or extra cherry tomatoes, AND finally one dollop of FullyRaw Cashew Sour Cream on top and some Lime Cilantro Avocado Sauce on the side!!

Kristina Carrillo-Bucaram is a pioneer in the local, organic food co-operative movement. The founder of Rawfully Organic, the largest raw, organic produce co-operative in the U.S., she has been 100% raw for almost 7 years. Kristina's inspiration for being FullyRaw came after she was able to rid herself of Hyperglycemia at the age of 18 eating nothing but a low fat raw vegan diet consisting solely of fresh fruits and vegetables with few nuts and seeds.
